The name ‘NINE’ stands for Niche Community, Innovative Menu, Nightlife Experience, and Elevated Entertainment, the company explained in a press release earlier this year.

The menu includes appetizers such as fried green tomatoes with whipped remoulade; handheld options such as Matt’s Chopped Cheese, with oxtail, American cheese, lettuce, tomato, Nine hot sauce, and white sauce; and entrees like New Zealand lamb with beef demi-glace, roasted allium puree, and Meyer lemon gel, or the Cowboy steak, a bone-in cowboy ribeye with cowboy butter. Judon, a New England Patriots linebacker and four-time Pro Bowler, has lived in Colleyville for three years, so he decided to start his business in the D-FW area.
NINE’s original opening was scheduled for mid-March 2024, but was postponed by several weeks for finishing touches, a spokesperson explained.

Former NFL linebacker Brian Cushing has opened NINE Kitchen & Lounge, a new restaurant and lounge concept in Victory Park. The establishment is located at 2211 Victory Park Lane. NINE features a modern and contemporary design with floor-to-ceiling windows, a marble bar, and a spacious dining room. The menu offers a diverse range of dishes, including elevated comfort food, shareable plates, and premium cocktails. Some of the signature dishes include the braised short rib with mushroom risotto, the seared salmon with saffron cauliflower, and the NINE burger with truffle fries. The restaurant also has a curated wine list and a selection of craft beers. Cushing, a former linebacker for the Houston Texans, was known for his leadership and on-field intensity. He retired from the NFL in 2017 and has since pursued a career in entrepreneurship. “I’m excited to bring NINE Kitchen & Lounge to Victory Park,” said Cushing. “We’ve created a place where people can come together, enjoy great food and drinks, and have a memorable dining experience.” NINE Kitchen & Lounge is open for dinner and weekend brunch.
