Ammos Brighton-le-Sands: A Culinary Haven by Peter Conistis Chef Peter Conistis, a pioneer of modern Greek cuisine, will unveil his latest creation, Ammos, in Brighton-le-Sands. Conistis has helmed several successful Greek establishments, including Cosmos, which earned a coveted hat in the “Guide to Good Food.” Olympus: A Culmination of Culinary Expertise Scheduled to open in late 2024, Olympus will take its place in Wunderlich Lane, Surry Hills. The restaurant’s menu will showcase mountain food with a hint of Athenian influence, promising a unique gastronomic experience. Greek restaurants are popping up like mushrooms in Sydney. For example, The Apollo, with its hat on Potts Point, has announced a new spin-off restaurant: Olympus.
Peter Conistis, the local pioneer of modern Greek cuisine, will also open Ammos in Brighton-le-Sands on Friday 12 July.
According to The Sydney Morning Herald, Jonathan Barthelmess, co-owner of Apollo, says Olympus will chart its own course rather than copy its siblings (Apollo also has a Tokyo office).

“The food at Olympus will be more traditional and regional, inspired by recent travels through inland Greece. It will focus on mountain food with a touch of Athenian attitude added to the mix,” he says.
Peter Conistis’s seafront restaurant Ammos in Brighton-le-Sands is set to open later this week, but it’s not his first Greek venture. The chef, who recently left Alpha, has run a number of establishments, dating back to Cosmos in East Sydney in 1993.
“Cosmos was the first Greek restaurant with a hat in the Guide to good food“, says Conistis, a pioneer of modern Greek cuisine.
Olympus will open its doors in late 2024 at Wunderlich Lane, part of the massive Surry Hills development on the corner of Cleveland and Baptist Streets.
